Oaxacan Green Corn is an heirloom flour maize from the mountains of Oaxaca, known for its distinctive green kernels. It is usually grown as a grain corn, dried and ground into flour for tortillas, tamales, and other traditional foods, and the green color often remains in the masa. For seed stewards, it’s a good example of a traditional open-pollinated landrace maintained through generations of farmer seed saving, and growing it helps keep that genetic diversity and agricultural heritage alive.
